We took the guess work out of Zoodles!!

Zoodles (zucchini noodles) are a huge trend in the low-carb, ketogenic, paleo, and gluten free lifestyles. They’re all over Pinerest and Facebook and there are all kinds of gadgets to help with making them.

Zoodle Tips:
*Sautee them instead of boiling them to help keep them from getting soggy and flavorless!
*Pair them with whatever topping you like – they work great for spaghetti and meatballs, alfredo, lo mein, and much more!
*If you don’t have a zoodle maker, use a cheese grater! Alternatively, slice the zucchini into long, thin strips for lasagna noodles, cut those in half (long-ways) for wide noodles (like egg noodles), and cut THOSE in half for fettuccine noodles!

Our Recipe:

Zoodles with Shrimp Scampi
2-3 servings

1 large zucchini
2 T good quality butter or ghee
6 Jumbo shrimp (8 large, 10 medium)
Juice of 1 lemon
1 T garlic (or to taste!)

In a skillet melt the butter over medium heat. Add zoodles and saute a couple of minutes. Add shrimp and toss. Add lemon, garlic, and salt and pepper to taste and continue to cook until shrimp are pink and opaque.
