Corn is one of those foods that many bariatric patients stay away from for one reason or another. We’ve found, however, that for our plans it works well as an occasional treat. It’s a whole grain, and filled with fiber, iron, vitamin B-6, and magnesium!

One of our favorite ways to cook it is by grilling it. It gives it amazing flavor, and is super quick and easy!

1 ear corn per 2 people
olive oil or other oil to brush with

Boil the corn in enough water to cover it by 2 inches.
The corn is finished when you can stick a tooth pick or corn holder pick into the end of the corn easily (about 10 minutes or so).
Remove from the water and dry off.
Brush your corn very lightly with some olive oil or other oil of choice.
Place the corn on the grill and grill it for 5-7 minutes, turning frequently, until some of the kernels begin to brown and caramelize.

ALTERNATIVE METHOD:
Wrap the oiled corn in foil and place on the grill (without boiling it). Cook it on the grill for 12-15 minutes, turning frequently.
