This colorful and healthy dish is a crowd-pleaser! In one version we add salami and two colors of bell pepper. This can be made so many different ways, use your imagination and make it colorful and tasty!

1 head of Cauliflower (choose the size you like we used a large one)
1 bell pepper of any color
1 cup of black olives (we like kalamata olives)
1 cup of chopped pepperoni slices
2 green onions chop the whole onions
1 jar of marinated artichoke hearts
1 jar of pepperoncinis
1 bottle of Italian dressing (we used an amazing balsamic vinaigrette from our local fruit stand!)

Chop the cauliflower into bite-sized pieces and boil in salted water until tender. Cool completely. Chop the bell pepper into small pieces, along with the olives, onions and artichoke hearts. Uniform pieces are better to mix evenly. Cut the pepperoni slices in half. We did not chop the Pepperoncinis up because some of our family don’t care for them and they look good whole.
Pour ½ the vinaigrette over the mixture and stir to see if everything is coated. After it sets an hour you may want to add more. Chill for at least two hours, but even better when chilled overnight!

VEGETARIANS: Omit the pepperoni and away you go!
