This delicious casserole can be made in a large dish for a family meal or pot-luck, or can be made in bites for single-serve deliciousness!


9 eggs
2 C cheese – we used a mixture of cheddar and habanero jack cheese
3 small cans mild green chilis
1 T louisiana hot sauce (optional)
1/4 tsp ceyanne pepper (optional)
1/2 tsp each black pepper and salt

Mix all ingredients in large bowl.

For bites: transfer mixture by the 1/4 cupful into muffin tins or mini muffin tins (2 T per mini muffin tin, 1/4 C per regular size muffin tin). Bake at 350 for 10-15 minutes or until slightly browned and puffy. These WILL shrink when cooling! This is normal and is supposed to happen!

For full-size casserole: transfer mix into casserole dish. Bake at 350 for 30-35 minutes or until slightly browned and puffy.

For both versions: Allow these to cool for at least 10 minutes before eating!
