Chocolate Guinness Cupcakes

These cupcakes are so simple and easy, literally anyone can make them. Don’t like beer? Use a sugar-free soda instead!

1 Box Sugar Free Cake Mix
1 Can Guinness Irish stout beer

Combine all ingredients in bowl, mixing well. Using an ice cream scoop or 2/3 C measure, measure the mixture into lined cupcake tins. Bake at 325 for 20-25 minutes, or until a toothpick comes out clean when inserted into the middle of a cupcake. Allow to cool for 5 minutes in tins, then remove and complete cooling on a cooling rack before icing.

Semi-Famous Cream Cheese Icing

This frosting is a staple in our family. Especially this time of year when we have birthday after birthday and need something on hand for a quick spur-of-the-moment celebration! The bonus? It’s NOT bad for you! For a bit of a protein boost, use cream cheese with Greek yougurt added to it!

2 blocks cream cheese, softened
1/4-1/2 C sugar substitute (we like steevia)
2 tsp vanilla
1 T heavy cream

Put cream cheese into mixer bowl and add vanilla and 1/4 c of the sugar substitute. Mix until almost fluffy. Taste. If desired, add more sweetener. Add cream and mix until fluffy. Store in airtight container for up to 3 days.
