We had you at bacon. Or jalepenos. Or cheese … In any case, these are a favorite of lumberjacks, electricians, and producers everywhere. Be sure to use FRESH jalepenos for the best punch!

Cut slits in a pint of fresh jalepenos and remove as many seeds and as much of the membrane as possible. Set aside.

In a large bowl combine 2 blocks of softened cream cheese with 1 lb shredded pepper jack (we found a great chipotle-cheddar that is AWESOME).

Gently stuff each pepper with a couple of tablespoons of mixture (stuff until it looks good to you!) and wrap each in a couple of pieces of bacon, using a toothpick that’s been soaked in water for an hour or so to secure.

Grill over medium heat, turning frequently, until bacon is crisp and peppers are tender (about 10-15 minutes)
