Once upon a time, there was a girl that loved pizza. So much so that she could eat half a large pie in one sitting. Then, she had WLS and couldn’t eat that pizza anymore. But she thought outside the box and put her favorite toppings together to make a savory, delectible bite that will make you question why a crust was ever needed …

1/2 lb Italian sausage
1/2 lb lean ground beef
1/2 c chopped pepperoni
1 C jarred pizza or spaghetti sauce (or use your favorite) plus 1/2 C (reserve to the side)
2 T chopped onion
2 T chopped bell pepper
1/2 C shredded mozzarella cheese
2 eggs, slightly beaten

Combine meats, pizza sauce, onion, bell pepper, and eggs in a large bowl. Mix well with hands to combine. Use a cookie scoop to trandfer to mini muffin tins. Top each bite with a tsp. of sauce and a sprinkle of cheese. Bake at 375 for 15-20 minutes, or until center reaches 160 degrees.
