This is a great summer salad! The way it is now, it would be a side dish. Add more shrimp or other protein and it makes a great main course! **TIP** If you don’t like cilantro or onion, feel free to leave them out! The recipe is still a great one!

Dressing:
Juice of 1 large, 2 medium, or 4 small limes (should come out to be about 1/4-1/3 C lime juice)
2 T extra virgin olive oil
1 T low-sodium or salt free fajita seasoniong
Salt and Pepper to Taste

Salad:
1 Avocado, diced (see the video for instructions!)
1/2 red onion, diced
handful cilantro, chopped
1/4 lb shrimp, cooked (may chop if desired)

Combine dressing ingredients in a large bowl with a wisk until well incorporated. Add salad ingredients and toss to coat. Allow to sit in refrigerator for up to two hours to chill and marry the seasonings, if desired. Serve cold!
