This is a no-cook meal that is so simple and easy ANYONE can do it. Check your produce department for pre-sliced veggies to make it even simpler!

1 bag frozen pre-seasoned chicken strips, thawed
2 bell peppers (any color) sliced
1 onion, sliced
1 poblano pepper, sliced (optional)
about 1/3 C lime juice
about 1/2 C olive oil
fajita seasoning to taste

Combine lime juice, olive oil, and seasoning in a large bowl. Add veggies and chicken and toss to coat. Allow to chill for at least an hour and up to a day. Serve cold.

Don’t like cold fajitas? Toss it in a pan or in the microwave to heat it up!
