Roll-Ups are a great way to sneak in extra goodness like veggies or cheese. They’re compact, fun, and easy to portion out. This lovely package of deliciousness is also simple to pre-assemble then freeze to eat later!

2 Boneless Skinless chicken breasts, cut in half lengthwise and flattened (scallopenied)
Sliced provalone cheese
Shredded parmesan cheese (about 1/2 Cup)
Shredded mozarella cheese (about 1/2 Cup)
1 Cup ricotta cheese flavored with extra parmesan, Itallian seasoning, and salt and pepper to taste
Favorite tomato sauce
Extra Mozarella cheese for topping

Pre-Heat oven to 375

Flatten chicken breasts using a kitchen mallet or have your butcher flatten them for you. (For instructions check out this video or this video)
Lay flattened chicken breast out on clean cutting board and cut in half to portion.
Fill one have with 1/4 C ricotta cheese mixture and sprinkle with shredded parmesan and mozzerella.
Gently roll up and place seem side down in a greased baking pan.
Repeat with remaining chicken and cheese.
Top with favorite tomato sauce and more cheese.
Bake at 375 for 20-25 minutes or until cheese is bubbling and browned.
Allow to rest for 10-15 minutes to cool and set before eating.

To freeze: Allow to cool completely in refrigerator. Remove each portion and place in storage container or plastic bag, making sure air is removed (these work beautifully with a vacuum sealer!). Freeze for up to 6 months.

To reheat:
Method 1: Allow to thaw in refrigerator. Remove from storage container or bag and place on baking pan. Cover with foil and bake at 350 for 15-20 minutes, or until heated through.
Method 2 (for use with vacuum sealer only): bring a large pot of water to boil. Place entire vacuum seal package into boiling water. Boil for 10-15 minutes or until heated through.
